Fabulous Fish

It's spring, which means everyone is craving lighter foods and able to enjoy standing outside to grill! My dad and I got a great recipe for lake trout last summer from our fishing expert, Chad. We got a chance to use it this past weekend, and it was fabulous! The best part is, it's really easy!

Catch or buy some lake trout.

Me and my huge lake trout. Armani sunglasses and BCBG zip up.

Feel free to wear cheetah print Sperry's in the process. Beware though, because they will get real blood on them.

Heat up the grill to around 425 degrees. Take the fillets and put them onto a large piece of tin foil. Put that fish covered foil on a baking sheet so that you can easily carry it over to the grill. Fold up the edges of the foil to make it like a tray. Then put sliced up sweet onion all over the top of the fish. Then pour some Italian salad dressing of your choice to coat the fish and onions. Top it off generously with shredded parmesan. Carry it over to the grill, and slide the tin foil tray onto the grill.

Let it sit on the grill with the top closed for a good 25-25 minutes. Check on it after 15 minutes and then every 5, the cheese on top should be starting to brown. Once the top layer of parmesan has browned all over the top, it's done!

Be careful sliding the tin foil tray off of the grill. I recommend a large spatula.

Serve with some fresh lemon slices.

Enjoy!
