Adventures In Stir Fry

Now that I am living with Josh, I have someone to make dinner for every night. This is encouraging me to branch out and try some new twists on my favorite meals to keep things interesting. The other night I decided to give stir fry a try with a mixture of all of my favorite veggies. I cheated and used easy bag rice and it turned out pretty well. I took lots of chopped garlic, sweet onion, red pepper, broccoli, carrots, cherry tomatoes, and edamame and stir fried them in some yummy virgin olive oil. It was a deadly combination! I figured out the trick is to put in the garlic, broccoli, carrots, and onions first since they take a little longer to cook. The pre-cooked edamame and the cherry tomatoes should join in last since you do not want to over cook the edamame or make the tomatoes explode. You also want to be careful not to over-cook and let things get mushy.


Although I normally stick to veggie stir fry, I decided to add some chicken this time. I took some boneless, skinless chicken breasts, cut them into big chunks and cooked them in some olive oil, garlic, ginger, and soy sauce. It was amazing!

I will absolutely be doing this one again soon! I think I may also need to invest in a good wok. I would LOVE to hear some more interesting takes on stir fry!

Back To Blogland

Checking back in from Detroit... finally!

It has been a crazy couple of weeks, and I am happy to say that I am finally feeling a little settled in my new apartment and job. Between work, unpacking, and getting organized in the apartment, I have found some time to make it to the first two Michigan home games. I LOVE getting back to Ann Arbor, and nothing beats a football game in the big house!


There have been a lot of changes in the apartment since Hank and I have moved in and I cannot wait to share them. This is just a sneak preview:

Proof!

Part of moving in with Josh, a rather large part, has been getting rid of a lot of things (clothes, shoes, purses, etc.) that I do not use on a regular basis, or at all. When it comes to purses and totes I am a bit of a hoarder because I really hate giving up a good bag. You just never know when it will be just perfect for an outfit or purpose. While going through my bags, I have been determined to prove that I actually use most of them so that I can justify keeping them. I now find myself digging out purses that go with whatever I am wearing that day and showing Josh so that he knows or at least believes I actually use them all. Just between you and me, I normally use the same two or three bags because I am too lazy to constantly move all of the things I carry daily. This whole use it or loose it thing has been very motivating.

Laundry...

I figured since it is Monday that I would share a good laugh! While I was folding these (pictured above), Hank was playing spaceship in the dryer. He then gave me the stink eye when I tried to remove him from the dyer. I cannot figure out his obsession with the laundry but he is either laying on the dirty clothes, sitting on top of the washer, or inside the dryer the second I turn around with my arms full of laundry. It is hilarious, but I am now terrified that I am going to shut him in there one day. He has been stuck inside the linen closet before...

The unpacking has been going well so far, and the decorating is also coming along nicely. I will share more later this week!

Fabulous Holiday Long Weekend, Big Move, New Job

It has been a crazy past few days! Thursday evening Josh, Hank, and I headed to the cottage to spend the long weekend up north. Needless to say it was a lovely, relaxing weekend with lots of good food and beach time!


I got a chance to dig into the latest issue of my favorite magazine, W while enjoying some fro yo at the beach. I spent pretty much every afternoon enjoying the beach, swimming, and soaking up some sun.


The weather was beautiful all weekend and the lake water was the perfect temperature! I even got a chance to take the dogs to the beach which was a blast as always. I got to watch some paddle boarders and it looked like so much fun that I am determined to give it a shot next summer!


Hank spent the weekend tortured by some small birds and frogs outside the window. He was hanging out on the window sill pretty much the entire time we were up north. Willard spent the entire weekend staring through the sliding glass door in the living room at this chipmunk who took up residence on our deck. It was pretty funny to watch this little guy just drive Will crazy.

After spending three days hanging out up north, it was time for the big move. Monday morning Josh, Hank, and I headed to Lansing to pack up the majority of my things and bring them to the new apartment in Detroit. It was not as stressful as I thought it would be but we definitely did not bring everything back and what we did bring definitely did not all fit in the new place... I will be spending my free time trying to eliminate, finish unpacking, and organizing in the next few days. Once I get things settled I will post photos of the place.

I started my new job in advertising yesterday, and although the last two days have been a little crazy I am really excited for this new adventure! I will probably be slacking a little in the blog department over the next week or two while I get my life together, but I promise good posts to follow!
