Now that I am living with Josh, I have someone to make dinner for every night. This is encouraging me to branch out and try some new twists on my favorite meals to keep things interesting. The other night I decided to give stir fry a try with a mixture of all of my favorite veggies. I cheated and used easy bag rice and it turned out pretty well. I took lots of chopped garlic, sweet onion, red pepper, broccoli, carrots, cherry tomatoes, and edamame and stir fried them in some yummy virgin olive oil. It was a deadly combination! I figured out the trick is to put in the garlic, broccoli, carrots, and onions first since they take a little longer to cook. The pre-cooked edamame and the cherry tomatoes should join in last since you do not want to over cook the edamame or make the tomatoes explode. You also want to be careful not to over-cook and let things get mushy.
Although I normally stick to veggie stir fry, I decided to add some chicken this time. I took some boneless, skinless chicken breasts, cut them into big chunks and cooked them in some olive oil, garlic, ginger, and soy sauce. It was amazing!

I will absolutely be doing this one again soon! I think I may also need to invest in a good wok. I would LOVE to hear some more interesting takes on stir fry!
